Real Chocolate vs What You're Actually Eating

Most of us settle for ordinary…but I think it's only because we don't know about the extraordinary. So we accept the familiar without seeking the remarkable. Like Chocolate, for example.
Most of us grow up thinking we know what it is. But the truth is kind of shocking—that sweet, familiar taste you've known your whole life? It’s a far cry from what the ancient Mayans and Aztecs considered a gift from the gods. Because chocolate was once the chosen ceremonial beverage. They believed it gave strength, vitality, and even mystical or hallucinogenic effects during ceremonies. (And they weren't far off! Cacao is packed with natural compounds like theobromine, magnesium, and antioxidants that boost mood, energy, and heart health.)
But deep in the volcanic foothills of the Philippines, one family is preserving something truly rare: one of only 19 officially recognized heirloom cacao sites in the world. What we discovered on this small farm completely changed how we see (and taste) chocolate.
Because this isn’t just some generic bar wrapped in pretty packaging. This is the real deal—and it’s nothing like what you’ll find in stores.
In our last video, we took you behind the scenes at Malagos Chocolate, where regenerative farming and traditional methods create cacao with flavors so complex, mass-produced chocolate doesn’t even come close.
Now, we’re diving even deeper—into the chocolate-making process itself. From meticulous bean selection to low-temperature roasting that preserves natural fruity notes, we uncover the secrets behind why most chocolate doesn’t taste like... well, chocolate worthy of an Aztec ceremony anymore.
P.S.
After you watch, let us know what you think—and if you’ve ever tried pure, unadulterated cacao liquor. We’re still buzzing from the taste test!
P.P.S.
For those of you who love the details: we asked Rex if they test for heavy metals in their chocolate. Turns out they do... and there are none. Zero. Nada. He sent us the reports and it totally floored us. Especially since most commercial chocolate is...You guessed it...loaded with heavy metals (such as lead (Pb), cadmium (Cd), and arsenic (As).
